Neon Pink Kandee Johnson Cupcakes


For any of you who don't know her... Kandee Johnson is one of my favorite people... I would love to meet her one day! She is a celebrity makeup artist and one of the happiest as well as kindest people you could ever imagine! She's had a really tough life but continues to smile and live her life to the fullest. She has a much more meaningful approach to makeup than most other makeup artists... she likes to help people feel better about themselves... encourages new mothers or older gals to get out of the house and live our lives. While watching her youtube videos I came across one she made on cooking cupcakes ... they were delicious! Especially the cream cheese frosting... if you want a good chocolate cupcake recipie go here....




I just added Neon Pink food coloring to the icing... and Voila! Happy Cooking... Even Happier Tasting!

Maple Curry Chicken Penne


Tonight for supper I think I'll cook some Maple Curry Chicken Penne

I will need:

2 cups whole wheat penne pasta
2 cups Chicken
3 peppers... green, red, orange
2 cloves garlic
1 red onion
1 cup whipping cream
1/4 cup maple syrup
2 teaspoons medium curry powder
pinch of oregano, salt, sugar, basil and parsley
handful of spinach

Heat a deep skillet with a bit of salted butter and olive oil... its best if ur chicken is precooked but if not fry it up now... just little pieces. Add ur garlic... i use a garlic press... and cut up your onion and add it. Carmalize the onions then cut up ur peppers and add them til they are slightly soft... then throw in ur chicken and seasonings (oregano, salt, sugar, basil, parsley) let that simmer for 6 or 7 minutes and add your maple syrup... let that simmer for a couple minutes and add 1/2 cup of cream... add your curry then the rest of you cream... turn the stove off add your spinach and let that simmer and thicken up for 5 or 10 minutes and then its ready! Oh and cook and drain pasta and add to sauce
